Chicken Fajitas Low Carb or Family Style
Anyone who’s been following me very long knows I love slow cooker meals and being able to feed the whole family, while maintaining my own low carb diet. As a matter of fact . . . I wrote that book. See my Keto Family Table book HERE.
But, today, I’m sharing a recipe adapted from my good friend Sarah Robinson at Sidetracked Sarah!

Chicken Fajitas Low Carb (or not)
Ingredients
- 1/4 c. olive oil
- 1/3 c. lime juice
- 1/2 tsp. salt
- 1/4 tsp. cumin
- 3 cloves garlic, minced
- 1/4 c. apple cider vinegar
- 1 tsp. oregano
- 1/2 tsp. pepper
- 1/2 tbsp. paprika
- 1 1/2 tsp onion powder
- 2 t chili powder (for spicy)
- 6-8 chicken breasts
- 2 peppers
- one onion
Directions
- Slice onions and peppers
- Place all ingredients except onions and peppers in slow cooker.
- Mix well, making sure all meat has been adequately covered.
- Cook on low for 8 hours or on high for 4.
- After 7 hours, add green peppers and onions, so they don’t get too mushy while cooking.
- Can be served with cheese, avocado, and/or sour cream.
- Use low carb tortilla or over lettuce for Keto/low carb option!
- *Serve on tortillas or over tortilla chips for the family. Offer rice or beans as a side for the family if they are not worried about carbs.
Grill Instructions
- Place all ingredients except onions and peppers in gallon sized freezer bag.
- Mix ingredients around well, making sure to coat the chicken well.
- Let marinade for at least 3 hours in the refrigerator before grilling.
- Wrap sliced onions and peppers in foil with a little bit of butter or olive oil.
- Grill your chicken until it’s cooked all the way through.
- Grill your veggies in the foil packet next to the chicken.
- Can be served with cheese, avocado, and/or sour cream.
- Use low carb tortilla or over lettuce for Keto/low carb option!
- *Serve on tortillas or over tortilla chips for the family. Offer rice or beans as a side for the family if they are not worried about carbs.
Freezer Bag Instructions
- Place all ingredients except onions and peppers in gallon sized freezer bag.
- Mix ingredients around well, making sure to coat the chicken well.
- Place sliced vegetables in quart sized freezer bag.
- Label both bags & lay flat to freeze.
- To cook – place bag with chicken in slow cooker and follow original directions.
