Keto Turmeric Cauliflower Asparagus Rice

Ingredients
- 1/2 head cauliflower
- 3/4 lb. asparagus
- 2 tsp olive oil -divided
- 1/2 yellow onion
- 1 tbsp curry powder
- 1 tsp turmeric (95% curcuminoids to be effective)
- 1/4 tsp ground cayenne pepper
- 1/2 tsp ground black pepper
- 1/4 tsp salt (pink himalayan)
Directions
- Chop cauliflower into florets. Add cauliflower little at a time in a food processor or chopper and pulse until cauliflower pieces are about rice size.
- Cut asparagus into 1-inch pieces. Add the asparagus to the food processor or chopper and pulse until the asparagus is about the size of rice.
- On medium, heat teaspoon of olive oil in a large skillet. Add chopped onion and cook until tender, about 5 minutes.
- Add another teaspoon of olive oil to skillet. Stir in cauliflower, asparagus, and spices (hold the salt). Spread veggies over the bottom of the skillet and cook about 2 minutes. Stir. Repeat until tender. (10 minutes)
- Season with salt.
