These meals can be thrown together using a store bought rotisserie chicken or by using last night’s seasoned chicken breast.
1. Chicken & Salad
Combine romaine, chopped or pulled chicken breast, croutons, a variety of fruits and vegetables such as apples or tomatoes, cheese and your favorite salad dressing. This can be prepared the night before or using store bought, ready made items. You will save money if you are willing to chop and dice yourself though.
2. Chicken Quesadillas
If you are using grilled or baked chicken this is a wonderful way to make a small amount of meat go a long ways. Chop your chicken up into small portions and put into a medium size mixing bowl. Next, combine the chicken with a cheese variety and a small amount of salsa. Mix until all the ingredients are combine and place into a tortilla. Heat the filled tortilla on a skillet until cheese is melted. Serve with rice and corn for a hearty family meal.
3. Chicken Enchiladas
Very similar to the chicken quesadillas in preparation. Combine chicken, cheese and enchilada sauce into a bowl. Pour a small amount of enchilada sauce onto the bottom of a baking dish. Fill tortillas with stuffing and then roll the tortilla over. Place the open side of the tortilla bottom down into the baking dish and repeat until the dish is full. Drizzle enchilada sauce over the top of the tortillas and sprinkle with cheese. Bake until bubbly.
4. Chicken Burgers
Place chicken, lettuce, your favorite cheese and sauce onto a hamburger bun and serve with a side of chips or fries. For added yumminess heat before serving.
5. Chicken Wraps
To save a few cents on this meal opt out of using an actual wrap and opt in for using traditional tortillas. Place romaine, cheese, sauce and chicken onto the tortilla, in that very same order and fold over. Deliciousness this easy and cheap should be a sin. Your entire family will enjoy this meal, particularly if you heat the chicken before serving.
