Berries in the Yard
My mom and dad are in full gear when it comes to frugal living. One of their goals in life is to be able to completely live off of their land. Sure, most people would think of that as extreme. I’m currently living in a subdivision so I understand how chickens may not work for everyone, but for the most part my parents are just ordinary folks, apart from the pet goats. I can say that and not get in trouble because they know it’s the truth. You see, my parents have not always been the way that they are today. It’s been a lifestyle change for them – homesteading. It’s one that they are willing to make in order to be in a place where they one day want to be. They have dreams that would otherwise be out of reach. They have lost a lot in life but that doesn’t mean they will never be able to retire. It just simply means that they need to adjust their living a bit in order to do so.
Truth be told, I love my family and going to the “family farm” is perhaps one of the greatest feelings in the world. There is always a new adventure in the mini oasis of their home and my children always come home worn out and filthy (actually they go there filthy most days).
Recently, a days worth of work was rewarded with my parents and my little family of four sitting around the large Little House on the Prairie style table eating the results of a hard days labor. Okay, my mom and dad picked the berries but I did some work around other parts of the garden.
These gorgeous red and deep purple berries for cobbler came straight from their yard. Bushes upon bushes of berries create a fence like structure around what would appear to be the end of their property. The closer you get to the natural fence do you realize that you are looking at berries for as far as your eyes can see. Come July and it may take a week for the family to gather all of the wild berries before they turn to seed. Until then, we will get a few cobbler worth every week.
This is the cobbler recipe my momma uses, she’s been cooking mean like since I was a little girl living in Central America and her many cobbler recipes have always been a hit. This one is a gluten free cobbler recipe for us needy folk. For those who don’t need gluten free recipes but “have to eat them” because someone you love it gluten free – you won’t miss a thing!
- 2 cups blackberries
- 1 cup gluten free Bisquick
- ¾ cup sugar
- 1 cup milk
- ½ cup butter
- Preheat oven to 350
- Wash blackberries under cool running water. Drain.
- Mix together the Bisquick and ½ cup sugar (set aside remaining sugar).
- Mix milk into the sweetened Bisquick.
- Place blackberries in the bottom of a 9x3 pan.
- Pour batter over berries.
- Pour melted butter over berries.
- Sprinkle remaining sugar evenly over mixture to give it a golden crust.
- Bake until lightly golden
