- 3 Tbs olive oil
- 2 med chopped onions
- 2 tsp minced garlic
- ½ tsp black pepper
- 1½ tsp ground cumin
- 1 tsp ground turmeric
- ½ tsp ground coriander /or 3-4 drops coriander essential oil
- 8 cups chicken broth
- 1 cup water
- 10 drops cinnamon to taste
- 2½ Tbs tomato paste
- 2½ cups chopped carrots
- 3½ cups chopped fresh cauliflower
- 2 cups dried lentils
- 1 10 oz package frozen chopped spinach - thawed/drained
- 2½ Tbs lemon juice
- Garnish fresh chopped cilantro
- 1 28 oz can of chopped or diced tomatoes
- Add everything BUT the cinnamon, spinach, lemon juice and fresh cilantro to the crockpot. Stir until well combined. Add 5 drops at a time of cinnamon (cassia) oil, stirring, tasting for desired strength. If in doubt, err on the side of caution. You can stir in more cinnamon oil at the end, if needed. Cook on low for 7½ hours. Add thawed, drained spinach. Cook additional 30 minutes.
