- 2 cups cauliflower – grated
- ½ large onion - chopped
- 1 egg
- ¼ cup parmesan cheese – grated
- pinch salt
- Heat pan on medium and add bacon fat/oil.
- Sautee' onion until translucent.
- Toss cauliflower in mixing bowl with cheese and egg.
- Add cauliflower cheese mixture to skillet.
- Cook until cauliflower hash is caramelized on bottom and flip after 3-5 minutes
- cook another 4 minutes. Cauliflower should be tender, and hash should be golden brown.
- Salt and pepper to taste.
- Eat alone, with ham and/or with fried eggs!
