Now, I just started my Low Carb diet (again) on Monday, so I added a few adjustments. Because, let’s face it – one way or another – this recipe is on my list this week.

Chicken Cordon Bleu Casserole with Low Carb Option
With a few simple adjustments (they really must be simple to go into my recipe book) this delicious casserole can be turned into a low carb dream. Can you tell I’m excited?
I’m super thankful for Build A Menu. First of all, the ladies who run it are awesome. Secondly, the program takes the weekly sales at your local grocery stores, and offers up all sorts of menu choices. I login, choose my store, choose which meal (Breakfast, Lunch, Dinner, Snacks, Dessert) and then I scroll through my options. Meal planning is easy with BAM.
There were plenty of Low Carb recipes for me to choose from, but this recipe was so yummy, and easy to convert. Anyway, with Build A Menu, once you choose all your menu items, snacks or whatever (broken down by servings – like menu for 2, or menu for 4-6) you can hit the “combine recipe items” and watch the cost of your ingredients list shrink.
You heard me right. It’s a one stop shop to take advantage of local store sales, do the family meal planning, and budget everything. Meal plans made easy. Amazing – Right? I sure do think so!
Chicken Cordon Bleu Casserole
Serves: 8-10
(Low Carb options in parenthesis)
Ingredients
- 1 stick butter salted
- 1/2 cup all purpose flour (substitute LC flour)
- 4 cups milk whole (substitute cream for LC)
- 1/2 cup provolone cheese sliced and cut up
- 1/2 lb Deli ham thinly sliced
- 2 Tbsp Dijon mustard
- 1 tsp garlic salt
- 3 chicken breast cut in chunks
- 8 medium potatoes (4-5 lb bag) peeled and thinly sliced (substitute cauliflower for LC)
- 3/4 cup bread crumbs (remove ingredient for LC – or use LC crackers)
- 2 Tbsp butter melted
Directions
Preheat oven to 400F. Spray 9×13 in. dish with cooking spray. In large pot, melt butter. Add flour; whisk until smooth. Gradually add milk; continue to whisk until sauce is creamy. Simmer about 10 minutes. Remove from heat; stir in provolone, ham, and Dijon mustard. Add garlic salt. Add chicken and potatoes to white sauce, stirring carefully to combine. Pour into casserole dish. In a bowl, combine bread crumbs and melted butter. Sprinkle evenly on top of casserole. Bake 45-50 min.
